Ingredients for the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Cocktail (produces 850ml, serving 10)

400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing

Directions

Making the Syrup: Combine all the ingredients in a pan, heat until it reaches a simmer, stirring until the sugar dissolves. After that, turn off the heat allowing it to cool completely. Transfer to a sterilised bottle, cap it and store in the fridge, it will last for up to a month.

Preparing the Cocktail Base: Pour the specified liquids into one big jug, leave to sit for 60 minutes, then pass it through preferably using muslin, so it's completely strained.

For serving: Measure 85ml of the premix to a mixing glass packed with ice, gently stirring carefully for about 60 seconds until cold. Filter into an chilled martini glass or equivalent, garnish with a few cranberries and complete it using a brief mist of the essential oil over the top.
